Guess if you already have ekpm2 the ekpm3 would work without coding, maybe others can help more, but in case you need to code the protool has easy way to code it to your car with few steps

Injectors coding has nothing to do with Reseting adaption value, once you code your injectors values it will not change with adaption reset!

Used OEM pan gasket with no RTV and 4 years with no issues, the Bentley manual mentions not to use anything and to make sure surface is clean and follow the pattern and torque to specs.
