Also, do the brake lights still work when the switch is filpped?

Not sure this is possible, but it would be cool if the app would automatically apply a watermark on screenshots for this reason. As long as the logo doesn't take up any real estate from the gauges...

Dipping down during shifts is not a problem at all. If you start seeing ign1 gradually decrease (like going down a set of stairs) as your RPMs are climbing then you should be concerned.
